Serving of Caesar Salad Photo
Large Quantity Caesar Salad Dressing Recipe for 50 People
7 cups salad oil
16 whole eggs
7 ounces anchovies
1-1/2 teaspoons paprika
3 cloves fresh garlic
1-1/4 cups lemon juice
4 cups grated cheese
1/2 cup Worcestershire Sauce
7 teaspoons dry mustard
6 teaspoons salt
4 teaspoons white pepper
Crack the eggs and put into mixer on high speed for one minute.
Leave the mixer on the same speed and slowly blend in the oil.
When fully blended, transfer to mixing bowl. In the mixer, combine the anchovies, paprika, garlic and lemon juice.
Blend these ingredients for two minutes at high speed, then transfer to the mixing bowl.
Add the remaining ingredients to the mixing bowl and mix very well.
This recipe makes enough for about 50 people.
It is an old recipe from the 1970's from The Old Holiday Inn in Hyannis.
