Very Old Recipe for Cream of Lettuce Soup

2 tablespoons butter
1 tablespoon cornstarch
1 teaspoon salt
1/2 teaspoon sugar
2 cups milk
2 cups water
1 head of lettuce
2 slices of onion
3 tablespoons cold water

Wash and chop the lettuce fine. Put the lettuce in a pot with 2 cups of water. Add the salt, sugar and onion. Cook slowly for 20 minutes. Heat the milk in a double boiler.
Blend the cornstarch with 3 tablespoons of cold water and then pour into the hot milk. Cook until it thickens slightly.

Add the lettuce and butter and serve. This soup may sound strange, but it really is very good!

You may want to add your own seasonings to your taste. It is bland cooked this way, for invalids or children.
This recipe is from an old 1924 Issue of Boston Cooking School Magazine.
